Avocado Egg Salad is a delightful, creamy blend of ripe avocados and perfectly boiled eggs, creating a nutritious and flavorful dish that's perfect for any meal. Using this egg salad in a romaine lettuce boat is a great way to cut carbs as well!
Ingredients
- 1 avocado
- 1 shallot
- 4 hard-boiled eggs
- A small handful of fresh dill
- 4 romaine lettuce leaves
- 4-5 bread and butter pickle slices
- 1 tablespoon of Dijon mustard
- 2 tablespoons of cottage cheese
- 1 tablespoon of mayonnaise

1 tablespoon of M26 Lemon Pepper

Chili Lime Beer Salt
Directions
You can mix all this in a bowl but I prefer the chopped method
- On a large cutting board add avocado, hard-boiled eggs, shallots, pickles, fresh dill, dijon mustard, mayonnaise & cottage cheese
Season everything with M26 Lemon Pepper
- Chop everything up together till everything starts to meld together
- Once it is to the consistent you like to add a few spoonfuls of avocado egg salad to a romaine lettuce leaf
- Season each Egg salad boat with Chili Lime Beer Salt
- Plate up & Enjoy!
