Pop Smoke Meal Prep

(5 day lunch meal prep)

Prep time - 15-20 minutes 

Cook time - 10-15 minutes 

Total time -25-35 minutes 

Ingredients 

  • Chicken cutlets 
  • Butter lettuce 
  • Romaine lettuce
  • Chic peas 
  • Black olives 
  • Cherry tomatoes 
  • Shredded Red Cabbage 
  • Pop Smoke Taco & Fajita Seasoning 
  • Avocado oil
  • Olive oil 
  • Balsamic vinegar 
  • Dijon mustard 
  • Garlic powder 
  • Black pepper 
  • Oregano 

Directions 

  • Cook chicken in a pan with a little avocado oil (Grilling the chicken is also a great idea)
  • Place the chicken on a plate to cool off 
  • Now you prep your salad bowls 
  • Chop up all the romaine lettuce 
  • Spread out your ingredients in 5 bowls for 5 separate meals (I use 5 ounces of chicken per bowl) 
  • Chop chicken down to bite sized pieces and place into salad. 

 Directions for the dressing 

(This is the dressing I use. You can use your own)

  • 1/2 cup Balsamic vinegar 
  • 1 cup of olive oil 
  • 1 teaspoon of Dijon mustard 
  • 1/4 teaspoon of garlic powder 
  • 1/4 teaspoon of black pepper 
  • 1/2 teaspoon of oregano
