Willie Pete's Veal Chops

This is a Fun way to cook veal chops and the smoke adds great flavor to a traditional dish!
2 veal chops
1 tablespoon of Butter
Cooking oil (I used Avocado oil)
Parsley chopped fine for final Garnish
Season veal with Willie Pete Chicken Seasoning
Set your oven or smoker to 225 degrees
Smoke veal chops till the internal temp hits 125
Heat up a skillet to medium high heat
Add your cooking oil to the skillet
Begin the reverse sear and sear all sides of the veal chop
Half way through the sear add your butter to the skillet
Once the internal temp hits 140 degrees internal they are done
Let them site for 5-10 minutes before cutting
Once they are cut up garnish the feel with chopped parsley
Plate and enjoy!
