Cut the steaks before seasoning, then keep each seasoning in its own batch through frying and serving. This makes it easy to compare Ma Deuce and Gunpowder with the same cut of beef.
Check the steak with a thermometer
Heat the frying oil to 325°F as directed below. Check the cubes with a food thermometer and cook to at least 145°F, followed by a three-minute rest. Cooking time depends on the size of the pieces and the oil temperature. Serve as steak bites or spoon them over rice.
NY strip steaks are cut into cubes and fried directly without a breading step. Season one batch with Ma Deuce and the other with Gunpowder to compare the two. Serve the cooked steak bites on their own or over rice.
Deep fry the batches separately until the steak reaches at least 145°F internally, checking with a food thermometer. Cooking time varies with piece size and oil temperature. Rest for at least 3 minutes before serving.
Plate up as is or on top of some rice and enjoy!
