Turn up the heat on your weeknight dinner with these bold, creamy, flavor-packed Cheesy Chicken Enchiladas. Layered with Willie Pete seasoned shredded chicken, melty cheese, and Invader Tomatillo Salsa, they deliver all the smoky, spicy comfort of Tex-Mex straight to your table.
What sets these enchiladas apart is the spicy ranch crema, which melts into the chicken and perfectly balances the tangy, zesty tomatillo salsa for a filling that’s creamy, rich, and irresistible.
Easy to assemble but big on flavor, these enchiladas are ideal for busy weeknights, feeding a hungry crowd, game day spreads, or even meal prep for the week.
Ingredients

Shredded chicken seasoned with Willie Pete Chicken Seasoning
- 8oz La Vaquita Crema Mexican Style Cream

1 packet Spicy Ranch Dip
- 6 butter tortillas
- 2-3 cups shredded cheese

2/3 of a jar Invader Tomatillo Salsa
- Cooking spray
Directions
Preheat the oven. Set your oven to preheat to 350°F (175°C).
In a bowl, carefully whisk together the 8 oz bottle of crema and the Spicy Ranch seasoning packet until completely smooth and thick.
Generously coat a medium rectangular baking dish with cooking spray to prevent sticking.
Lay out a butter tortilla. Add a handful of the Wille Pete seasoned shredded chicken, shredded cheese, and a spoonful of the spicy ranch crema mixture.
Roll the tortilla up tightly and place it seam-side down in the prepared baking dish. Repeat this process until you have 6 enchiladas snugly in the dish.
Pour the Invader Salsa directly over the rolled enchiladas (using about 2/3 of the jar, or to your preference). Top generously with the remaining shredded cheese.
Place the dish in the oven at 350°F for about 20-25 minutes. You are looking for the cheese to become bubbly and slightly crispy, and for the edges of the tortillas to lightly brown.
Remove from the oven and let the dish cool for about 15 minutes to let the cheese set before plating.
