These Bacon Wrapped Dove Jalapeño Poppers are the ultimate wild game appetizer: smoky, creamy, and packed with bold flavor. Fresh jalapeño halves are stuffed with cream cheese, topped with seasoned dove breast, and wrapped in bacon for a perfect bite of heat, smoke, and savory goodness.
Using Bag & Tag Wild Game Spice on the dove and finishing with Infidel Pork Rub on the bacon, this recipe brings out the best of wild game cooking. Smoked on a Big Green Egg at 350°F until the bacon crisps up, these poppers are a guaranteed crowd-pleaser for hunting camp, game day, or backyard BBQs.

Ingredients
- 6–8 dove breasts (cleaned and trimmed)
- 3–4 fresh jalapeños (halved lengthwise, seeds and stems removed)
- 8 oz cream cheese (softened)
- 6–8 slices thick-cut bacon

1 tbsp Bag N Tag Wild Game Spice

1 tbsp Infidel Pork Rub

Directions
Prep the jalapeños: Cut the tops off the jalapeños, slice them in half lengthwise, and remove seeds and stems.
Fill with cream cheese: Spoon softened cream cheese into each jalapeño half.
Season the dove: Coat dove breasts generously with Bag N Tag Wild Game Spice.
Assemble the poppers: Place one seasoned dove breast on top of the cream cheese in each jalapeño half. Wrap with a slice of bacon and secure with a toothpick.
Season the bacon: Sprinkle the outside with Infidel Pork Rub.
Smoke the poppers: Preheat your Big Green Egg (or smoker) to 350°F. Arrange poppers on the grate and smoke until bacon is browned and crisp on the edges but still tender in the middle, about 20–25 minutes.
Cool and serve: Remove from smoker, let rest for a few minutes, pull out the toothpicks, and enjoy a smoky, spicy wild game bite.
