Combining ground bison and beef with savory vegetables and a sweet glaze, this smoked meatloaf is perfect for feeding a crowd or enjoying a special meal. Ingredients
- 3 lbs. ground bison
- 3 lbs. ground beef (83/17)
- 2 green bell peppers, diced (or to taste)
- 2 small OR 1 large onion, diced (or to taste)
- 2 diced jalapeños (or to taste)

1/4 cup Cannibal All Purpose Seasoning

1/3 cup Platoon Sergeant SPG Seasoning

1/2 cup - 2/3 cup Bunker Bacon Bourbon BBQ Sauce
- 1-2 tbsp. Worcestershire Sauce
- 1 1/2 cups flour
- 1/4 cup milk powder
- 6 eggs
- 1 cup shredded sharp cheddar cheese

1/4 cup Bunker Bacon Bourbon BBQ Sauce
- 1/4 cup Worcestershire Sauce
- 2-3 tbsp. Honey
For the meatloaf

Directions
In a large bowl, add all the ingredients EXCEPT the cheese, and mix well.
Cover the bowl, and refrigerate for 45 minutes - 1 hour.
- Pull the bowl from the refrigerator. Add the cheese to the mixture and mix well.
- Form loaves - (This amount will make 2 loaves.) Make sure you press the loaves together well to get the air out.
Wrap the loaves tightly in foil and freeze for about 45 minutes. (Go ahead and fire up the smoker!)
- If you haven't already done so, prepare the glaze!
Place the meat loaves on heat safe cooling racks, and place them in the smoker. Let smoke for about 30-45 minutes before applying the glaze. Continue to smoke the loaves and glaze every half hour until fully cooked with a temperature reading of 165F in the center, approximately 2 hours.
- Remove the meatloaf from the heat, and let it rest for about 15-30 minutes, then enjoy!
