Perfect for busy weeknights, simply add all ingredients to the slow cooker, let it simmer for 4 hours, and then add in the rice and chicken broth. Ingredients

1 can (14-1/2 ounces) fire roasted garlic diced tomatoes, undrained

1 cup chicken broth

1½ cups uncooked rice

1½ pounds boneless pork loin chops or pork stew meat

1 celery rib, chopped

1 medium green pepper, julienned
-
1 garlic clove, minced
-
1 small carrot, julienned
-
1 small onion, finely chopped
-
2 Jalapeños
-
1/2 teaspoon Fire Chief hot sauce

3 Tbsp Claymore Cajun Seasoning
Directions
Season pork with Claymore Cajun Seasoning and add to crock pot
Add all remaining ingredients (except for rice and broth) to the crock pot with the pork and put on 4 hour cook.
Now that the whole house smells amazing and 4 hours has past by, break up the pork and stir the ingredients together while adding the rice and broth. Let it cook for another 20-30 minutes or until the rice is fully cooked.
Simple as that, now let it cool off and enjoy!
