- 1 Large Salmon Fillet (skin removed)

Directions
- Prep Sweet Potatoes: Wash potatoes and chop off the ends. Slice them in half and cut into uniform cubes to ensure even cooking.
Season Potatoes: Place the cubes in a bowl and coat with cooking oil spray. Season generously with Infidel Pork Rub and toss until fully coated.
- Skin the Salmon: Make a cut near the tail of the fillet down to the skin. Hold the skin firmly using a paper towel for grip, and work your hand or knife underneath to peel the skin off in one piece.
- Cube Salmon: Cut the salmon fillet into uniform cubes (roughly 1 inch).
Season Salmon: Coat the salmon cubes thoroughly with Claymore Cajun Seasoning
Air Fry
- Place sweet potatoes in one air fryer basket and salmon in the other (don't overcrowd the baskets to ensure air flow).
Set the air fryer to 400°F.
Cook the salmon for 4–7 minutes (check around 2.5 minutes and shake the basket). Ensure internal temp reaches approx 145°F.
Cook the sweet potatoes for 10–12 minutes (or longer if needed) until tender and slightly crisp.
Let cool slightly and portion into meal prep containers.
