Directions
Trimming Your Ribs
- Remove the Membrane: Turn the ribs bone-side up. Slide a knife under the corner of the membrane, then grab it with a paper towel and peel it off.
- Square the Rack: Trim the edges to create a neat, rectangular shape for even cooking and presentation.
- Remove Rib Tips: Cut off the rib tips (cartilage and small bones along the bottom edge) to leave a flat, uniform rack. Save these trimmings for another dish if desired.
- Trim Excess Fat: Remove any thick chunks of fat or uneven meat from the surface for a cleaner cook.
Cooking Instructions
- Set up your smoker. Preheat the to 225°F-250°F.
- Generously season both sides with Infidel Pork Rub. You may put a binder before seasoning if desired.
- Place the ribs bone-side down. Smoke for 4 hours unwrapped to develop a flavorful bark.
- Let the ribs rest for 10-15 minutes before slicing.
Serve with your favorite BBQ sauce or enjoy the rich, smoky flavor of Infidel Pork Rub on its own.
