1 pork tenderloin
Willie Pete Chicken Seasoning
Gunpowder Steak and Brisket Seasoning
Infidel Pork Rub
1 onion, sliced
2 fresh pears, sliced
2 sweet potatoes, mashed
Season the Pork Tenderloin with Willie Pete Chicken Seasoning and Gunpowder Steak and Brisket Seasoning.
Heat some olive oil in a large skillet over medium-high heat.
Sear the pork tenderloin on all sides until browned, about 2 minutes per side.
In the same skillet, add the butter, rosemary, sliced onion and pears and sauté until softened, about 3-4 minutes.
Remove the pork from the skillet and slice the pork tenderloin. Pour in the chicken stock.
Add a little Infidel Pork Rub to the onion and pear mix to sweeten it up.
Let the mixture simmer and reduce until it thickens, about 5-7 minutes.
Add back the sliced tenderloin to the skillet with the reduced onion and pear mixture.
Sauté the pork for another minute or two, until heated through.
Spoon the onion and pear mixture over the sliced pork, and serve with the roasted sweet potatoes. Enjoy
