A Great way to cook up some Lamb Chops!
Directions
Trim Excess fat off of the lamb rack
French the bones on the lamb rack
Season the lamb with Willie Pete Chicken Seasoning
Set your smoker to 250 degrees (I used cherry pellets)
In the meantime cook your beans in a pan on low-medium heat
Drizzle cooking oil over the beans and season with Platoon Sergeant Seasoning
Once the lamb reaches 120 degrees internal take them off the smoker
Heat up a cast iron skillet with cooking oil
Sear all sides of the lamb till the internal temp reaches 125-127 degrees
Let the lamb sit for 15 minutes before cutting
Cut the lamb rack into the chops
Place on top of the green beans and sprinkle Alder Wood Smoked Sea Salt
