Mexican Egg Rolls Leftovers
I love all things food, I think we all know that by now... But here recently I have been on an Asian kick for recipe creation. Last week we went out to our local Mexican restaurant and I saw the Mexican Egg Rolls on the menu and knew I had to make this! So we cleaned out the kitchen fridge and came up with these ingredients to make these Egg Rolls.
These are quick and easy to make (if you fry them in oil it's faster) and you can put what ever you want in them!
1 Egg Roll Package
3 Tbsp Claymore Cajun Seasoning
1lb Ground Elk
2 Diced Jalapeños
2 Cups of Shredded Cheese
Cilantro Lime Rice
Spray Olive Oil
Brown your ground meat and season with Claymore Cajun Seasoning, this can be and meat of your choice like beef, turkey, or chicken we just had elk already made in the fridge. Once cooked crumble it into small pieces.
Lay out one egg roll and place 1.5 Tbsp of your ground meat, 1 Tbsp of rice, 3/4 Tbsp jalapeño, and as much cheese as you want!
Wet the left and right corners, fold them over to touch. Then wet the corner that is furthest from you and roll the egg roll towards it making sure everything is nice and tight!
Once all egg rolls are wrapped hit them with spray oil
Put them into an air fryer at 375 for 40 minutes
Once crisp let cool and enjoy!
