2-3 tbsp Mayonnaise

2-3 tbsp Sour Cream

1-2 tbsp Prepared Horseradish (to taste)

Pinch of Sugar

2 (8 oz) Custom Burger Patties (Chef recommends a Brisket and Prime Rib blend)

Directions
For the Prime Rib & Horseradish Sauce
Lightly sprinkle the prime rib with a small amount of Gunpowder seasoning.
Spray a heated griddle or grill pan with avocado oil. Place the prime rib on the griddle and sear for about 5 minutes on each side to develop nice grill marks. Remove and let it cool for a few minutes.
Pour a generous mound of the Gunpowder seasoning onto a clean prep surface. Take the cooled prime rib and roll it completely in the seasoning, rubbing it into all sides until fully coated. (Pro-Tip: Doing this after the sear ensures the heavy crust doesn't burn!)
Spray the bottom of a Dutch oven with avocado oil, place the prime rib inside, and cover with the lid.
Bake in an oven preheated to 250°F for approximately 1 hour and 15 minutes. Aim for 125°F internal temperature for a perfect rare center.
While roasting, make the sauce: Mix the mayonnaise, sour cream, horseradish, sugar, lemon juice, and a dash of Gunpowder seasoning. Set aside.
Remove the prime rib, pour remaining Dutch oven pan juices over the top, slice, and serve with the sauce.

If not already formed, shape your burger blend into thick 8 oz patties.
9. Pour Gunpowder seasoning onto your prep surface. Roll the outer edges (the sides) of each patty in the seasoning until the perimeter is evenly coated. (Pro-Tip: Keeping the seasoning off the flat top and bottom prevents the spices from burning during the high-heat sear!)
10. Preheat a griddle or grill to high heat and sear the burgers on both sides.
11. Pull off the heat when the internal temperature reaches your desired doneness (135°F for medium, 125°F for rare).
12. Assemble on toasted buns with fresh lettuce, tomatoes, and red onions.
