Directions
- Butterfly the chicken breasts, opening them into thinner, evenly sized pieces.
Season the chicken on both sides with Claymore Cajun Seasoning and Standard Issue Salt & Pepper.
Slice the red and green bell peppers into strips.
Pierce the sweet potato, season the outside, wrap it in aluminum foil, and bake until soft.
Place the seasoned chicken in a hot cast-iron skillet and cook, flipping as needed, until browned and fully cooked.
Remove the chicken from the skillet and let it rest briefly before slicing it into bite-sized pieces.
Add the sliced red and green bell peppers to the skillet. Season and sauté until softened.
Place the cooked sweet potato in a cast-iron skillet. Open it and mash the flesh across the bottom of the skillet.
Add butter and hot sauce to the sweet potato, then mix them into the mashed flesh.
Layer the sautéed peppers and sliced chicken over the sweet potato.
Cover the chicken and peppers with slices of white cheese.
Heat until the cheese is completely melted and lightly browned.
Finish with a drizzle of sour cream and a generous spoonful of guacamole.
Serve directly from the skillet while the cheese is hot and melty.

@mrmarco.antonio Chicken Fajitas Sweet Potato I washed my sweet potato and poked holes all over with a fork then rubbed it with olive oil and salt. The sweet potato was placed on the rack in my oven at 425 degrees f for 1 hour. While the potato was baking I prepped my green and red bell peppers and chicken breast. I butterflied the chicken breast then seasoned with salt, pepper and @grillyourassoff Claymore Cajun Seasoning. In a cast iron skillet I added some olive oil and cooked the chicken and then sautéed the peppers with oregano and salt. When the potato was done, I opened it up, crushed the insides then spread butter, honey and salt. I added the peppers, chicken and provolone cheese then placed it under the broiler to melt the cheese. I then added sour cream and smashed avocado when it was done.
