This week Pit Master Paul made Short Rib Tacos using our Platoon Sergeant Seasoning. This will amp up any Taco Tuesday.
Ingredients
-
4-5 Beef Short Ribs
-
Salsa Verde
-
Beef Tallow For cooking Oil or Duck Fat
-
4 TBSP of Butter
-
Platoon Sergeant Seasoning
-
Tortilla For Tacos
-
Parsley for Garnish
-
Pickled Onions
Directions
Trim any silver skin or unwanted fat off the short rib
Season Your short rib with Platoon Sergeant Seasoning
Place in a vacuum sealed bag and remove all air from the bag
Set your Sous Vide to 200 Degrees
Once your water is up to temperature place your bagged short rib in
Let it cook in the sous vide for 4 hours
Once 4 hours has passed heat up a frying pan over medium - high heat with your beef tallow
Remove your short rib from the bag and make sure your pat the meat dry on all sides
Sear off your meat on all sides and add your butter and baste the short rib
Place your short rib in a deep dish and use a fork or your hands to shred/pull the meat
Place your meat at the bottom of a tortilla and top with salsa verde, pickled onions and parsley
Plate up and Enjoy!
