This recipe has so much going on that it will leave your family speechless. I made a twice-baked potato into a casserole and it came out amazing. The potatoes, bacon, cream, garlic, green onions, and cheese give this dish your classic baked potato flavors into a whole dish. If you want to spice it up even more you can season your bacon with our Infidel Pork Rub. The recipe also calls for our Whiskey Smoked Sea Salt for the garlic you can also add more to taste for a smokey note.
Ingredients

1 Lb Classic Cut Bacon

5 Lb Russet Potatoes

Cooking Oil ( I Used Duck Fat)

Standard Issue Seasoning

Willie Pete Chicken Seasoning

½ Cup Of Sour Cream For The Top

2 Sticks Unsalted Butter
-
1 Cup Sharp Cheddar, Grated
-
1 Cup White Cheddar, Grated
-
1 Cup Half And Half
-
1/2 Cup Green Onions, Green Parts Only, Diced

Whiskey Smoked Sea Salt
Directions
Preheat your grill or oven to 400 Degrees
Place the potatoes on a sheet pan and spray with a non-stick cooking oil (we used Duck Fat)
Season Potatoes with Standard Issue Salt & Pepper Seasoning
Transfer the sheet pan to the main cooking grate of your grill or center rack of your oven. Roast the potatoes until tender. To test tenderness, use a toothpick or knife to pierce the potatoes. If the toothpick or knife goes in easily and smoothly, it is done, about 60-75 minutes.
Place the bacon on a wire rack over a foil lined sheet pan. Place on the second shelf of the grill or the oven and cook until crisp, about 45 minutes. Remove from the rack, make sure to let the bacon cool long enough before proceeding to dice or crumble.
After 60-75 minutes your potatoes should be done and fork tender
While the potatoes are still warm, scoop out the flesh. Place in a pan. Chop a handful of the skins and reserve for later.
In a large bowl, put the flesh of the potatoes along with the sour cream, butter, white cheddar, milk, half of the bacon and half of the green onions. Add about two tablespoons of Wille Pete Chicken Seasoning. Mash with a handheld potato masher to desire consistency. Taste and adjust seasoning with salt, as needed.
Spray a Lodge Cast Iron Casserole Dish with your cooking oil & transfer the potato mixture to the dish and level the top. Sprinkle the sharp cheddar evenly over the top.
Bake until the cheese is melted and slightly browned on top, about one hour.
Serve the Twice Baked Potato Casserole topped with the remaining remaining green onions and bacon, as well as the crisped potato skins and a drizzle of sour cream.
