Bacon-Wrapped Pork Loin

This is how you turn a pork loin into the main event.
We start with a solid cut of pork, hit it heavy with Infidel Pork Rub, and stuff it with a creamy mix of cream cheese, garlic, onions, and bell peppers. Then it gets wrapped in a full bacon weave. Because if you’re doing this, you’re doing it right.
As it cooks, it’s basted with Bunker Bacon Bourbon BBQ Sauce, building that smoky, sweet, sticky finish that locks everything in.
What you get is juicy, tender pork, a rich and savory center, and crispy bacon in every bite.

Ingredients

Pork loin

Infidel Pork Rub
-
2 blocks of cream cheese, room temperature

1 head of freshly minced garlic
-
1 red onion, sliced
-
1 sweet onion, sliced
-
1 bell pepper, sliced (any color)
-
2 ½ - 3 packages of bacon
-
1 c. Bunker Bacon Bourbon BBQ Sauce

Directions
With the fat side down, slice the pork loin down the middle about ¼” to ⅜” from the bottom. (Be careful not to cut it all the way through! It will need to be whole in order to roll it.) Repeat the process for the edges. (You should be able to lay the loin out flat.)
Liberally and evenly season the exposed portion of the pork loin with Infidel Pork Rub.
In a bowl, add the 2 blocks of cream cheese, minced garlic, and a little of the Infidel Pork Rub. Mix together well. Spread this mixture as evenly as possible on the pork loin.
Arrange the sliced red onion, sweet onion, and bell pepper on the pork loin. Lightly dust the veggies with the Infidel Pork Rub.
Roll the pork loin (longside). Wrap it, and set it aside. *If you are not sure how to do this step, watch the YouTube video. The link is below.
Make a basket weave with the bacon. *If you are not sure how to do this step, watch the YouTube video. The link is below.
Place the loin (seam side down) onto the basket weave edge closest to you. Begin to wrap the loin by tucking the bacon on the ends first, then roll. Tuck the bacon ends under the edge of the pork loin.
Season the bacon with the Infidel Pork Rub. Wrap the pork loin in foil and freeze long enough to firm it so that the shape holds.
Prep the smoker. Once it reaches temp (about 250F - 275F), place the pork loin on indirect heat, and smoke it until it reaches an internal temp of about 150F.
Baste the bacon with a generous coat of the Bunker Bacon Bourbon BBQ Sauce. Smoke the pork loin until the BBQ sauce “tacks up” and the internal temp is about 180F.
Remove the pork loin from the smoker, and let it rest for a minimum of 30 minutes.
Slice it up, and ENJOY!
