Dragon Eggs Breakfast Casserole

“Dragon Eggs” breakfast casserole calls for 26 eggs, three kinds of pork, and a hungry crowd. Bacon, sausage, and ham are layered over a buttery hash brown crust with peppers, onions, fluffy eggs, and melted sharp cheddar. Infidel Pork Rub seasons the meats, while Platoon Sergeant SPG brings salt, pepper, and garlic to the eggs.
Our pitmaster Tracy Lingle of My Chow Line learned to make this Dutch oven breakfast casserole during his scouting days and has been tweaking it ever since. Cook it over coals, in your smoker, or in the oven for a hearty breakfast that feeds about 14–16 people. It’s a good one for camping trips, weekend brunch, or breakfast for dinner. Pass the hot sauce.
Ingredients

1 lb. sausage

1 lb. bacon, cut, (can buy bacon already cut, or cut it yourself)

1 lb. cubed ham

Infidel Pork Rub
-
2 jalapeños, diced
-
4 bell peppers, diced, (you can use 1 color, but we used 4 different colors for ours)

3 small onions, diced

26 eggs
-
Platoon Sergeant SPG
-
1 ½ c. heavy whipping cream
-
1 stick of butter
-
1 ½ bags of hash browns
-
1 lb. each sharp cheddar and extra sharp cheddar, shredded and mixed together

Optional: Fire Chief Hot Sauce

Optional: BBQ Sauce
Directions
Pre-warm the Dutch oven. Prepare your heat source of choice (coals, wood for smoking, or oven) to 350F.
Season the sausage, cut bacon, and cubed ham with the Infidel Pork Rub. Brown/cook each meat separately, then set aside in a large bowl. (To clarify, the cooked meats can all be placed in the same bowl.)
Saute the diced jalapeños, bell peppers, and onions in the same pan you browned/cooked the meats in until slightly tender. (We like the vegetables a little crunchy!) Add the vegetables to the bowl with the meat and mix them together.
Crack the eggs into a medium bowl. Season with Platoon Sergeant SPG, and add the heavy whipping. Whisk together well.
Melt the stick of butter in the Dutch oven. Add the hash browns, and mix them into the butter. Make a “crust” with the hash browns in the bottom of the Dutch oven.
Layer about half of the meat/veggies mix onto the hash brown crust, followed by about half of the egg mixture, then half of the cheese mixture. Repeat the layers with the other half of the meats/veggies and vegetables.
Cook at 350F (with coals, smoked, or in an oven) for about an hour to an hour and a half (until the eggs are firm). When using coals, a good rule of thumb is two times more on top of the lid than underneath the oven. How many you use will depend on the size of your oven. Don’t forget to rotate the lid and oven every so often!
Top the casserole with the last half of the cheese and cook until melted. Enjoy! (For even more flavor, try it with Fire Chief hot sauce!)
