Tired of beef? Try some Cowboy Pork chops they will be a huge hit at your next BBQ!

Ingredients
4 cowboy pork chops
4 potatoes
Cooking oil (I used Olive oil)
Green onions
Shredded cheddar cheese
Sour cream
Butter

Directions
Season both sides of the pork chops with Platoon Sergeant Seasoning and Infidel Rork Rub
Let the pork chops sit and sweat out for 5-10 minutes
Place the pork chops on your smoker at 225-250 degrees
Coat your potatoes with olive oil and season with Standard Issue Salt & Pepper Seasoning
Place potatoes in the oven at 350 degrees
When pork reaches 137-140 internal remove them from the smoker
Sear both sides of the pork chops till it reaches 145 internal
Once the pork reaches 145 internal let them rest for 10 minutes
While the pork chops are resting start to assemble your baked potato
Cut open the top and place some butter on top
Then add sour cream
Add your cheddar cheese Sprinkle some green onion Finish off with Some standard issue to taste
Once pork chops have rested slice them up and plate up with your loaded baked potato and enjoy!

I used Pecan Pellets to smoke these pork chops and finished over lump charcoal
