Gather 'round for a taste of tradition with Pitmaster Patrick's Grilled Pork Steaks! A timeless, budget-friendly dish, perfected through countless family feasts over the years. Fire up the grill and dig in!

Directions
Season pork steaks on both sides with Infidel Pork Rub. Place seasoned pork in fridge for at least an hour.
Set up grill for indirect cooking at 275-300. Use Whiskey Barrel Wood Chips for smoking wood.
Once the grill is up to temp, place pork on the indirect side and cook until they reach about 150 internal temp. (Approx. 1 hour)
Temp is more important than time. There’s no need to flip the pork.
- When pork reaches 150, remove from grill, cover with foil, and crank heat up on grill to 400 or so.
- Sear the pork over the direct side of the grill for 1-2 minutes per side.
Place pork back on the indirect side, coat both sides with Sailor Jerry® Ironsides BBQ Sauce (or any of your favorite BBQ Sauce) and let it cook for 10-15 minutes.
Pull pork off the grill and let rest for 5-10 minutes.
