Ingredients

Pork belly

Apple juice

Bunker Bacon Bourbon BBQ Sauce

Directions
Buy skinless pork belly or remove the skin yourself
Trim pork belly to desired thickness (make sure to leave some fat on)
Cut the pork into 1-1 & 1/2 inch strips
Cut the pork in the opposite direction to make 1 inch cubes
Season the pork belly with Infidel Pork Rub on all sides
Place pork on a wire rack and let it sit for 10-15 minutes
Set your smoker to 225-250 degrees (I used pecan pellets)
Spritz the pork belly every hour with apple juice
Place the wire racks into the smoker for 3-4 hours until a nice bark forms
Take the pork belly off the wire racks and place into a deep dish metal tray
Slice up some butter and place around the pork belly
Sprinkle the top with brown sugar
Drizzle honey over the top of the pork belly
Cover the tray with aluminum foil
Place the tray back in your smoker or oven at same temperature
After 1 hour the pork belly should become really tender
Remove the pork belly into a new tray and drizzle Bunker Bacon Bourbon BBQ Sauce on top
Gently toss the pork belly around so the sauce coats all sides
Place back into the smoker/oven for another 10-15 minutes
After the pork belly is glazed let it rest for 5-10 minutes
