1 boneless pork loin roast (about 3-4 pounds)

Directions
Preheat your sous vide water bath to 140°F (60°C).
Score the fat cap of the pork loin with a sharp knife. This will help the flavors penetrate the meat.
Rub the pork loin all over with duck fat. This will help the pork loin stay moist during cooking.
Generously coat the pork loin with Infidel Pork Rub.
Season the pork loin with salt and pepper for additional taste.
Sous vide the pork loin for 10 hours at 140°F (60°C). Preheat your oven to 500°F (260°C).
Remove the pork loin from the sous vide bag and pat it dry with paper towels.
Place the pork loin on a baking sheet and roast it in the oven for 8-12 minutes.
Flip the pork loin over and roast for another 8-12 minutes, or until the internal temperature reaches 145°F (63°C).
If you want a little extra bark, broil the pork loin for a couple of minutes.
Let the pork loin rest for 10-15 minutes before slicing and serving.
