Take a trip down memory lane with Pitmaster Chris' Shrimp Bombs!
This explosive recipe combines bacon, cheese, and Donkey Dongs for a mouthwatering twist on his high school favorite. Seasoned with Cannibal Spice and Infidel Pork Rub, these heavenly bites are a flavor bomb like no other!
Ingredients
- 1 lb 16-20 shrimp (devein and peal, but keep tails on)

6+ pieces of thick cut bacon

2 tsp Infidel Pork Rub
- 2 8oz packs of cream cheese
- 1 bundle of green onion
- 1 8oz shredded sharp cheddar cheese

10x jalapeno slices from Donkey Dongs

2 tablespoons Cannibal All Purpose Spice
- 16 oz sour cream

40 oz of vegetable oil

12oz+ dark beer (I used a red ale and may need more to drink)

2 tablespoon Cannibal All Purpose Spice
- 1 cups of all-purpose unbleached flour

1/2 cup panko
- 1/2 cup bread crumbs

2 tablespoon Cannibal All Purpose Spice
- 1 egg (beaten)
- 1 cup flour
Beer Batter
Breadcrumbs
Directions
Cook the bacon on medium heat. While frying, dust it with Infidel Pork Rub. Set it aside to cool afterwards.
Mix 8oz sour cream with 1/2 Spicy Ranch Dip
Mix 8oz sour cream with 1/2 Ranch Dip. (If you just want one dip, you can make a full batch)
- Set in fridge.
- Peel and devein shrimp- keep tails on. If bought peeled and deveined- obviously skip. Just rinse.
In a large bowl, combine the following
Diced green onions
10pcs of pickled Jalapenos from Donkey Dongs (diced)
16oz cream cheese
8oz bag shredded sharp cheddar cheese
2 tablespoon Cannibal All Purpose Spice
Next steps
Mix well with hands (wearing gloves).
Roughly cut previously cooked bacon.
Add to above bowl and lightly mix in as well, careful to not crush bacon too much.
- Roll into a medium size ball in your hands and then flatten out into disk. (~3.5"x4")
Place 1 shrimp onto mixture in hand.
Roll mixture around shrimp, keep tail exposed.
- You will want to make sure the shrimp is covered with mix.
Chill in fridge while making for the breading.
Heat oil in pot (no more than 350 degrees).
Batter making
For Beer batter: Mix 12oz beer and 1 cup of flour to pancake mix consistency.
For Breadcrumbs batter: Mix bread crumbs, panko, 2 tablespoons Cannibal All Purpose Spice in bowl. Add flour to a separate bowl. Add beaten egg to another bowl.
Frying
- Batter shrimp as desired.
For Beer batter: Dip wrapped shrimp in batter then transfer to oil.
For Breadcrumbs batter: Dip wrapped shrimp in flour, egg, then breadcrumb and panko mix.
Fry for 7 min in hot oil.
Remove and set aside on towel or coffee filter lined tray- keep in oven at lowest temp while you cook the next batch. I could fit 4 shrimp bombs per batch.
Once all are cooked - use the previously made ranch dip for dipping and enjoy.
Recipe Note
Notes:
- Two people will make this go quicker - this is a labor intensive process (about 3 hours).
- Don't let the oil get over 350- it will burn the batter and undercook the shrimp.
- Parcooking or steaming the shrimp for 2 min before rolling with mixture will help ensure they are cooked all the way through.
- Air fryer didn't turn out that well, wouldn't recommend.
