The Land Mine
Much like a land mine, this dish is packed full of explosives. These flavors will be a mixture you have never experienced. The Land Mine is a major twist on a loaded baked potato. This is a pulled pork sweet potato topped with cilantro lime sauce and parmesan cheese. Check out the recipe below 👇
What you need -
1 - INFIDEL PORK RUB
1 - BONE-IN PORK SHOULDER ROAST
2 - CUPS APPLE JUICE
1 - SWEET POTATO
1 - (8 ounce) SOURCREAM
1 - JALAPEÑO
1 - LIME
1 - BUNCH CILANTRO
1 - PARMESAN CHEESE
The Meat -
Heavily season the pork shoulder with infidel pork rub on all sides. Place on the smoker at 225°F fat side up spraying with apple juice every hour for the first 3 hours. Remove and wrap in foil and place back on smoker for another 6-8 hours or until the internal temp is 190°F. Remove from smoker and leave rap for 20 minutes. Pull apart to desired texture and move the mixing bowl. Add Infidel Pork Rub and juices to desired taste.
The Sauce -
Put Sour cream and a good sized bunch of chopped cilantro into a blender, Chop jalapeño, add the juice of 1 lime. Blend until smooth. Add salt and more lime to taste
The Potato -
Clean, wrap in foil and add to the smoker for the last 45 minutes to an hour. (Or until potatoes are soft)
Go Time -
Sliced sweet potato open lengthways and add pulled pork to the desired amount. Apply cilantro lime sauce and shred Parmesan cheese on top. Enjoy!
