Why buy bacon when you can make your own!
Ingredients
-
1-4 pounds of pork belly (no skin)
-
1/3 cup of kosher salt
-
2 cups of brown sugar
-
1/2 cup of maple syrup
-
3 Tablespoons of Infidel Pork Rub
-
1/4 cup of apple sauce
-
4 tablespoons of black pepper
-
1 teaspoon of Applewood liquid smoke
-
1/4 Warm water
Directions
Trim pork belly to your preference
Put pork belly aside in a ziplock bag
Mix all the ingredients in a bowl and add warm water last
Stir mix thoroughly
Pour entire bowl in the zip lock bag with the pork belly
Make sure the pork belly is completely coated
Place Pork on a tray in the refrigerator
The pork belly needs 3-5 days to cure (I recommend 4 or 5 days) everyday flip the bag over in the refrigerator
After the cure is done set your smoker to 225 degrees (I recommend using apple or hickory wood)
Smoke the pork belly till the internal temperature reaches 150 degrees
Then put on a plate and place in the refrigerator for at least 30 minutes (1 hour is recommended)
Then slice to desired thickness
Fry up the bacon slices if you want more flavor season the slices with Infidel Pork Rub!
