Poor Man’s Burnt Ends
8 hours 25 minutes
This week Pit Master Paul uses a chuck roast from KC Cattle Company to make some delicious burnt ends. This is a great alternative to using a brisket.
When your grill is to temperature, place the seasoned roast on the grill and cover using indirect grilling at 275 degrees
Smoke the roast until the internal temperature reaches 165 degrees
Let it rest for 10 minutes
Cut into 1 inch cubes and transfer to a foil baking pan. Sprinkle with 1/4 cup of Ma Deuce Steak Seasoning and slivers of butter
Drizzle with Bunker Bacon Bourbon BBQ Sauce, reserving a couple of tablespoons for later.
Toss gently to coat all of the pieces in a little of the sauce.
Place the pan on the grill, close the lid and cook for an additional 1 1/2 to 2 hours, or until the sauce is bubbling and the cubed bits of beef are falling apart tender.
Sprinkle with additional Ma Deuce to taste and the remaining Bunker Bacon Bourbon BBQ Sauce.
Stir gently and return to the grill for just a few more minutes until everything is well incorporated.
Serve hot as a main course or on bread/buns with toppings.
You don't have to be poor to cook these. This is a faster recipe to do versus a full brisket! You can use our Hellfire Honey Habanero to spice it up or our BBQ Sauce for the classic taste.
