Viral Rotisserie Chicken and Rice with Crispy Skin

This viral rotisserie chicken and rice recipe already gets a lot of attention—but adding crispy chicken skin takes it to another level. By air frying the skin until golden and crunchy, then layering it over a savory, seasoned chicken and rice base with Willie Pete Chicken Seasoning, you get a perfect mix of texture and flavor in every bite. Ingredients

1 rotisserie chicken

2 cups cooked white rice

1–2 tsp Willie Pete Chicken Seasoning

1 tbsp fish sauce
-
2 tbsp dark soy sauce

1 tbsp sesame oil

3–4 green onions, sliced
Directions
Remove the skin from the rotisserie chicken and set aside.
Place the skin in an air fryer at 375°F for 6–10 minutes, or until crispy.
Remove, let cool slightly, then break into bite-sized pieces.
Remove the remaining meat from the chicken and shred into bite-sized pieces.
In a large mixing bowl, add:
Cooked white rice and shredded chicken
Add: Willie Pete Chicken Seasoning, Fish sauce, Dark soy sauce, Sesame oil. Mix thoroughly until rice and chicken is evenly coated and combined.
Fold in sliced green onions and give it one final mix.
Serve the chicken and rice in bowls, then top with the crispy chicken skin pieces.
Serve immediately while warm.
