Take your chili game to the next level with our Over the Top Chili recipe, featuring the bold flavors of our new Texas Chili Seasoning.
This hearty dish combines juicy ground chuck, spicy chorizo, and a medley of fresh vegetables simmered in a rich beer base. As the meat cooks over the chili, all those delicious drippings mix right in, creating a depth of flavor. The real star? Our Texas Chili Seasoning – a perfect blend of spices designed to give your chili the authentic Texas heat and smoky, savory goodness it's known for.
Ingredients
- 2 bell peppers (chopped)
- 2 whole white onions (minced)
- 6 cloves of elephant garlic (minced)
- 3 jalapeños (diced, seeds removed from 2, keep seeds from 1)
- 1 bottle of Shiner beer (or your favorite beer)

1 (15 oz) cans tomato sauce

2 (14.5 oz) cans diced tomatoes (I chose Fire Roasted Diced Tomatoes)

8 tablespoons of Texas Chili Seasoning
- 8 oz chorizo
- 4 lbs ground chuck beef (or lean ground meat of choice)

Platoon Sergeant Salt, Pepper, Garlic Seasoning
For the Chili Base
For the meat
Directions
Set your oven or Big Green Egg to 275°F.
Prepare the Vegetables
- Chop the bell peppers.
- Dice the jalapeños, removing seeds from 2 but keeping the seeds from 1.
- Mince the onions and garlic.
Place the vegetables in a large dutch oven.
Prepare the Meat:
- In a separate bowl, mix the ground meat and chorizo together.
Lightly season the mixture with Platoon Sergeant seasoning.
Shape the mixture into a large patty and place it on a cooling rack.
Setup
Place the cooling rack with the meat patty over the dutch oven, allowing the meat drippings to flavor the chili base.
Before putting the dutch oven into the oven or Big Green Egg, wipe the outside of the dish with oil and cover the bottom with aluminum foil for easy cleanup.
Cook
Place the dutch oven and cooling rack setup in the oven or Big Green Egg.
Cook until the meat reaches an internal temperature of 155–165°F.
Finish the Chili
Once the meat is cooked, break it into small pieces.
Mix the meat into the chili base, stirring in Texas Chili Seasoning to taste.
Pour the bottle of Shiner beer, add the 1 can of Tomato Sauce and 2 cans of Diced Tomatoes over the vegetables.
Let the chili continue to cook (lid off) for 30 mins to 2 hours.
Serve
Remove from heat, let it cool slightly, and enjoy your Over the Top Chili!
