Willie Pete Chicken Seasoning (to taste)

Standard Issue Salt & Pepper (to taste)

1 Tbsp Minced Garlic

3 Tbsp Olive Oil

2 Chicken Breasts

8 Oz Softened Cream Cheese
-
1/2 Cup Parmesan Cheese

3/4 Cup Heavy Cream
-
3/4 Cup Chicken Broth
-
1 Cup Chopped Spinach
-
1 Cup Diced Mushrooms

Duck Fat Spray
Directions
Chop your vegetables and sauté in 1 tbsp of olive oil until they are tender and wilted.
Mix the cooked vegetables with the softened cream cheese, parmesan, Standard Issue (salt & pepper). Set aside.
Slice and flatten the chicken breasts and stuff with the filling mixture. Fold over the chicken breast sealing the mixture inside.
Heat 2 tbsp of oil in a pan and season the chicken breasts with Willie Pete. Place the chicken in the pan and cook for about 2-3 minutes on all sides.
Add chicken broth to the pan and cover it with a lid. Allow the chicken to continue cooking until it reaches an internal temperature of 165 degrees, which should take about 20 minutes total cooking time. You can also bake the chicken in the oven at 375 degrees for 25 minutes.
Once the chicken is fully cooked, remove it from the pan and set it aside. Add heavy cream and a cornstarch slurry to the pan to thicken the sauce.
Once the sauce has thickened, top it over the chicken and garnish with chives. Enjoy!
