Ingredients

Willie Pete Chicken Seasoning

10-20 Chicken Wings

Duck Fat or Cooking Oil (I used Avocado oil)

Thermometer
- 1/2 Cup Grated Parmesan Cheese
- 1/4 Cup Unsalted Butter, Melted
- 3 Cloves Garlic, Minced
- 2 Tablespoons Chopped Fresh Parsley
- 1 Tablespoon Lemon Juice
- 1/2 Teaspoon Salt
- 1/4 Teaspoon Black Pepper

Fire Chief Hot Sauce or 1/4 Teaspoon Red Pepper Flakes
(Optional, for a spicy kick)
- 1/4 Teaspoon Dried Oregano
Parmesan Garlic Wing Sauce
Directions
Preheat your smoker to 250-275 degrees.
Season your wings with Willie Pete Chicken Seasoning.
Place your wings in your smoker.
Let the wings cook till they reach an internal temperature of 165 degrees.
Grill your wings so the skin gets some char on it.
Once your wings hit 185 internal they are done.
Place all your wings in a large mixing bowl and sauce them with your homemade parmesan garlic sauce.
Toss all your wings and garnish with chopped chives.
